Mojito

This is one of the most refreshing summer cocktails around.

It was made famous in Cuba around the 1920s, but has a far older pirate heritage dating back to Sir Francis Drake.
The word mojito loosely translates as 'little soul', meaning the little soul of Cuba, and should therefor contain a Cuban or Cuban-style rum.
The most famous Cuban-style rum is, of course, Bacardi.

2 shots Bacardi Carta Blanca
1 shot fresh lime juice
1/4 shot sugar syrup
at least 6-8 mint leaves
1 shot soda water

In tall glass, add the mint leaves and gently crush them. The goal is to gently break the leaves rather than reducing them to paste.
Add all other ingredients except the soda.
Fill the glass three-quarters with crushed ice.
Top with the soda water.
Garnish with a mint sprig.

Drink while watching the late summer sunset and imagine yourself in Cuba.
